RECIPE: Strawberry Chia Jam

Another recipe I've enjoyed making is strawberry chia jam... We used our fresh strawberries from the farm for this recipe and it was DEEE-LISH!

Strawberry Chia Jam

2 cups strawberries (any berries will work) 1 tbsp lemon juice 1 tbsp honey 2-3 tbsp chia seeds

In a small saucepan combine strawberries and lemon juice. Cook over medium heat until the strawberries begin to break down and become syrupy, about 7-9 minutes. Use the back of a spoon or potato masher to mash the berries. Remove the saucepan from the heat and stir in the honey and chia seeds. Allow jam to set for 5 to 10 minutes.

So easy and so delicious!

RECIPE: Ningxia Red® Popsicles

As the temperature continues to rise, one snack we've enjoyed are Ningxia Red® Popsicles. I've created this recipe for our favourite popsicles and they are so delicious!

This recipe has a couple ingredients that aren't in your typical popsicle...

1) Applesauce- I decided to add applesauce to see if it could give it a better texture so I dug at the back at the food storage and found a jar and it turned out great!

2) Ningxia Red®- this is a drink that Young Living sells which is high in antioxidants and other amazing nutrients! It contains a wolfberry, or goji berry, puree as well as other fruits and is infused with essential oils. You can find more information about this drink here
But in a nutshell, it supports the  immune system, promotes longevity and detoxes the body. When I drink it, I feel refreshed and revitalized. It really helps my mood and improves my focus.

Ningxia Red® Popsicles

2 cups fruit juice
1/2 cup applesauce
1/4 cup Ningxia Red®

Mix it all together and pour into popsicle moulds. (I found ours at the dollar store)
Freeze and enjoy!

Hello Summer!

The school year has come to an end. Ella had an amazing first year of kindergarten and she was s happy to go to school everyday. However, as that chapter closes, a new one begins and  I'm quite looking forward the summer and warmth.

We've already started enjoying the weather with water play and lots of other outdoor activities. We've made yummy Ningxia Red®popsicles and strawberry chia jam. In fact, I've recently discovered a strawberry farm and we've already gone strawberry picking and we will be back for some more! They are delicious!

Sometimes being a single income family limits our finances, and also the job itself can be mentally and physically exhausting and demanding but in the end I am in love with path I chose. I love that I am able to go out and do things with my kids and provide them with fun experiences and adventures. I am grateful for my husband who works a job that he doesn't necessarily love, but that he HAS a job and that he can come home at the end of the day and also spend the weekends with us. (for the most part) I'm grateful for my children and that Heavenly Father has provided me with an opportunity to teach His children and I'm also grateful for what they teach me.

The Boisvert’s in Disneyland

Such an amazing week! We had some hiccups and meltdowns and all sorts of imaginable things that one would expect from a five, four and one year old. 

But we also made magical memories! We stepped out of comfort zones, went on crazy adventures and, overall, had a blast! The kids were troopers and walked over 35000 steps a day! 

Im always impressed by the design, detail and organization of Disney Parks. This was no exception.

We stayed at Homewood Suites (the convention location) and it was most definitely accommodating. They provided delicious breakfasts, and rotated the menu so there was something different the next day and we tried to take advantage of the complimentary dinners Monday through Thursday! 
Our room was huge! It was a one bedroom suite with kitchen and was very roomy for our family of five. We could see the fireworks from our window. One minor “complaint” is that there was not enough dishes to accommmodate everyone in our party. We did utilize their complimentary grocery pick up and delivery twice. The first time, I sent them screen shots of our Vons order so they basically got everything but we had to order  second time because I forgot some things so I just wrote a list and they didn’t get the right things (chef boyardee when we wanted real, fresh ravioli and pizza sauce when I specified “pasta sauce” 🤷🏻‍♀️)

We shuttled to the parks from the Toy Story Parking Lot across the street. By day three we figured out a routine that worked best for our family. We would go in the morning, come back for lunch (and a nap for the little guy) and then go back to the park in the evening. By the end we had a pretty good system going. I'm glad we brought our double stroller (despite it being cumbersome and annoying to fold and carry on the bus four times a day...)  If Ella and Lily got really tired, we would put them in the stroller and I would wear Theodore.  

We used MaxPass for the first couple of days. It was really helpful but gets expensive after a while. I kept it on one ticket after that just for the photos and utilized the FastPass distribution centres as much as we could and we used Rider Switch a lot!

As we walked out of the park for the last time on Thursday night, I shed some happy-sad tears. Our family  probably won’t be visiting again for a while and I’m so grateful for the opportunity that we had to go. 

I’m going to miss those fireworks though!  🎆 they’re always so spectacular!

I miss it already, and already dreaming of our next trip 💭✨

The last pictures are a  “Goodbye Disney” tradition that we used to do when we would go when I was a kid. We would share chocolate milk at the airport waiting for our plane.
